Oven roasted potato and kale gratin


Equipment

  • Metric measuring spoons and cups
  • Scales
  • Peeler
  • Bowls 2x medium 2x small
  • Sieve.
  • Spoons
  • Grater
  • Wooden spoons.
  • 4x Baking dishes.
  • 4x serving spatulas.
  • 1x sauce pan.
  • 1x frying pan.


Ingredients

  • 50 g butter
  • 10 large potatoes. (Approx)
  • 15 kale leaves.
  • 2 onions.
  • Salt and pepper.
  • 80g parmesan cheese.
  • 20 parsley stalks.


What to do

  • Preheat the oven at 190 degrees c. use the scales to weigh the butter and set it aside to bring it room temperature.
  • Peel the potatoes and boil for the next group. There will be some cooked potatoes ready for you to slice up.
  • Slice the onions and pan fry until golden brown.
  • Thinly slice all the potatoes and sprinkle them with salt flakes and pepper.
  • Roughly chop the parsley and kale and place aside until we are ready to put the gratin together.
  • Next grate the cheese.
  • Line all the baking dishes with butter; next place a layer of the sliced potatoes, then the onions, kale and parsley, and finally the grated Parmesan cheese. Repeat this process once more then finally sprinkle the cheese and dollops of butter on to the dish.
  • Bake for about 20 mins. Or until the gratin is golden brown. Remove from the oven and allow cooling a little and place on the tables with serving spoons.
