Oven baked apples with ricotta and sultanas

Ingredients

  • 6 apples
  • 250gm ricotta
  • 50gm caster sugar
  • 1 cup sultanas
  • The rind and juice of 1/2 orange
  • 2 tablespoons honey.
  • ½ teaspoon cinnamon.


What to do

  • Place the ricotta, cinnamon, sugar, orange juice and rind, and sultanas into a bowl and bind all the ingredients together.
  • Set up the chopping board and knives, and then begin to slice the apples in half. Hull out the core with a dessertspoon and trim the top and bottom of the apple with a small knife. Place the apples skin down on to a baking tray and spoon the ricotta mix on to the centre of the apples .Cover the tray with foil and put all the tray of apples into the oven at 190 degrees c. and cook until golden brown. This could take about 15 minutes.
  • Once the apples are cooked bring them out of the oven, drizzle with the honey and serve onto the platters.
